Rosemary potatoes

I am not sure about you all but as I get older I have realized that I feel like doing less and less of house related chores including cooking. I have been investing my time on other things like playing with my dog, reading, writing and seriously learning to do nothing (which is a very difficult task for me). Cooking, although not entirely eliminated from my daily life, has been transformed. These days, I have resorted to making easier dishes. Dishes that are super easy to make and yet tastes great. Rosemary potatoes is definitely one of them. There are only few of those dishes that you can eat anytime of the day and who doesn’t love potato!!

Super easy to make, here is what you need:

About 6 to 8 medium sized red potatoes (you could probably use any kind)
1/2 cup of olive oil (I use olive, but you could use vegetable oil)
Salt to taste
Pepper to taste
1 tablespoon minced garlic
1 tablespoon rosemary (dried or fresh, whatever you have!)
1 tablespoon Italian seasoning (optional)

In a large bowl, add diced potatoes, garlic, herbs, salt and pepper.869552188553407770

Add oil and mix well.

In a baking dish, spread the potatoes. (use aluminium foil if you prefer a clean dish after the cooking is done, I am that lazy ;)).

Bake it in a pre-heated oven for 30 mins or until the potatoes are cooked (400 degree Fahrenheit)

After the potatoes are cooked, add 1 tablespoon of olive oil and mix well before serving.
