Candied Yams!

Although Thanksgiving is long gone, I haven’t stopped cooking yams. Since yams are super tasty and are the world’s healthiest food, they are my favorite.  Yams have tons of nutritional values that includes vitamin C, potassium, manganese, fiber, vitamin B6. Yams are also used  as a natural alternative to hormonal replacement in women who have reached the age of menopause. It has also been suggested that it protect against cardiovascular and many other diseases . Here I have a candied yam recipe (one of many ways to prepare yams)! Everyone in my family enjoys this recipe and I hope yours will too!

Ingredients:
3 large yams
4 tablespoons honey (or you can use 1/3 cup of brown sugar instead)
1/2 stick of butter ( you can use 1 stick of butter if you like more butter)

Directions:
1. Peel yams and cut into 2-inch cubes (or smaller sizes).
2. In a large pot, boil yams until they are fork tender (about 20 minutes). DSC_5573-001

3. Drain water and transfer yams into an oven safe bowl.  Add butter and honey and cook in oven for 20 mins at 350 F. (If you don’t have an oven, cook yams a little longer and add butter and honey.) DSC_5583-001
