Stuffed Butternut Squash!

Thanks to my parents in-law, we have tons of butternut squash lately. There are so many ways to cook butternut squash, but stuffed butternut squash is Sam’s favorite.

Ingredients:
1 butternut squash, cut off the bottom quarter to make a bowl, remove seeds
1 large apple (peeled and cut in small pieces)
Salt to taste
Black Pepper to taste
Bacon pieces (2 tablespoons)
Feta Cheese (1 tablespoon)
1 teaspoon rosemary

Directions:

  • Preheat oven to 400 degrees F (205 degrees C). Cut the butternut squash and remove the seeds.
  • In a small bowl, add apple, black pepper, salt, rosemary, bacon and mix well.
  • Stuff the butternut squash with apple and add bacon and feta cheese on the top.
  • Bake stuffed squash in the preheated oven for 1 hour, or until flesh is fork-tender. Serve warm.

Fried Tilapia!

It has been a long time since I last updated my blog. I have been busy, mostly thinking a lot!! Well, when you are too busy either working or thinking too much like me and do not have a lot of time to make a fancy meal, here is an easy recipe for you. It takes no more than 5 minutes but yet is tasty.

Ingredients:
1 frozen Tilapia (per person)
1 tablespoon butter
Salt and pepper to taste
Cayane pepper to taste
Grill spice mix to taste
Black Pepper to taste

Direction:

1. Heat the butter in a small nonstick frying pan.

2. Once the butter is melted, add tilapia and sprinkle spices to the both sides.

3. Cook at the medium heat. Generally take 5 mins to cook.

4. Enjoy with salad.
