Thai Curry

I love everything about Thailand, the shopping, beaches, culture and the industrious nature and energy of the people that I noticed when I was there. Above all, Thai food definitely is my favorite food. There are many different Thai dishes that I would love to post recipes of, but lets just start with Thai curry.  Among many different kinds of  Thai curries, Massaman, Panang and Yellow curries are my favorites. It is easy and quick to make restaurant quality curry at home in just 30 mins. The recipe I have makes any type of Thai curry as long as you have the curry paste.

Ingredients:
1 can coconut milk
1 cup of pork meat diced
1 large onion chopped
2 tablespoons of curry paste
1 cup of carrot sticks sliced
1 large green capsicum (bell-pepper) sliced
1 cup of mushroom sliced
1/2 teaspoon of curry powder
1/2 teaspoon of cumin powder
4 tablespoons of oil
Salt for taste

Procedure:

1. Prepare all the ingredients.2. Heat 4 tablespoons of oil in a medium sized pan and add 2 tablespoons of curry paste of your choice and half teaspoon of cumin and curry powder. 3. Cook the curry paste for 1 minute at medium heat. DSC_8336-0014. Add half a can of coconut milk in the paste. Cook at medium heat for 3 minutes. 5. Add meat of your choice and cook for 6 minutes at medium heat.6. Add carrot sticks and mix well.7. Cover and cook for 10 minutes.8. Add green capsicum (bell pepper) and onion.

9. Stir well and add remaining coconut milk and cook for 5 minutes.10. Add mushrooms and cook for another 5 minutes.Serve hot with white rice!Here are some pictures from our Thailand trip. So, we might have to go back again and take more pictures!
