Pani Puri (just puri)

Pani puri is a tasty street food. It is fun to eat during the summer. Here is how you make puris for pani puri.

Ingredients:

  • 1/4 cup all purpose flour
  • 3/4 cup fine semolina Flour
  • 1/2 cup water (as needed)

Procedure:

  • Mix the flour and semolina flour.
  • Add a little warm water at a time to make firm dough.
  • Cover the dough with a damp cloth for about ten minutes.
  • Divide the dough into 10 round balls. Then press it flat.
  • Using a rolling pin, start rolling individual dough to form nice even round discs. If puris are not even then they do not puff up. (Try not to use flour while rolling because it will  soak up oil and make the dough too dry).
  • Use a small round dish to make small puris.
  • Heat oil in a deep pan. Make sure to use enough oil to cover the puris. Test that the oil is hot enough by dropping in a small piece of dough. If the dough floats then the oil is ready.
  • Once the oil is hot, gently slide the puris in from the side.
  • The puris will settle at the bottom for a few seconds before it floats to the top.
  • Once the puri starts floating, gently press on one side. This will help the puri to puff up more.
  • After a minute, flip the puri and cook on the other side until they turn brown.
  • Transfer puris to another dish, use paper towel to drain excess oil. 
  • Make a small hole in the puri, add spicy potato and spicy pani and enjoy!

Bacon & Pineapple Fried Rice!

Bacon & Pineapple fried rice is one of my favorite types of fried rice. I learned to make it from my American mom. It is relatively easy to make for those days when you want a nice meal without a lot of effort. Enjoy!
Ingredients:

  • 1 cup onion, chopped
  • 1 cup of bacon (large pieces)
  • 1 can of pineapple (drained)
  • 1 can baby corn
  • 2 cups cooked cold rice (white or brown rice)
  • 1/2 teaspoon cumin powder
  • 4 tablespoons of soy sauce, or for taste
  • Salt for taste or soy sauce
  • 2 table spoon cooking oil, or as needed
  • 1/2 teaspoon minced garlic

Directions:

In a non-stick pan, add bacon pieces and cook it on a medium heat.

Cook bacon until it begins to brown.

Remove fried bacon from pan and set it aside on a plate.

In the same pan, add onions, two table spoons of oil, cook for 4-5 minutes on high heat.

Add baby corn and cook for another 5 minutes.

Add soy sauce and cook for another 2-3 minutes.

Add pineapple.

Mix pineapple and cook for 5 minutes.

Add rice and soy sauce.

Mix thoroughly and add bacon.

Mix thoroughly and cook for another 5 minutes on a medium heat. Now it is ready to eat. Serve hot and Enjoy!
