Puri bread

Puri is a deep fried bread made up of whole wheat flour or all purpose flour. It can be  eaten as a meal with curry or just as a snack with tea.

Ingredients:
1 cup of all purpose flour (set aside half cup of flour in case the dough gets too wet)
A pinch of salt
1 tablespoon vegetable oil
1/2 cup of warm water
Vegetable Oil – for deep frying

Procedure:

  • Mix all dry ingredients and oil together.
  • Add a little warm water at a time to form a dough. Coat the dough with oil.
  • Divide the dough into 10 round balls. Then press it flat. 
  • Using a rolling pin, start rolling individual dough to form nice even round discs. If puris are not even then they do not puff up. (Try not to use flour while rolling because it will  soak up oil and make the dough too dry). If the puri is thicker, it will puff up more, but experiment to find out what you like. 
  • Heat oil in a deep pan. Make sure to use enough oil to cover the puris. Test that the oil is hot enough by dropping in a small piece of dough. If the dough floats then the oil is ready.
  • Once the oil is hot, gently slide the puris in from the side.
  • The puri will settle at the bottom for a few seconds before it floats to the top.
  • Once the puri starts floating, gently press on one side. This will help the puri to puff up more.
  • After a minute, flip the puri and cook on the other side.
  • Cook for one more minute and the puri is ready to eat.
  • Use paper towels to drain excess oil.
  • Serve hot and enjoy with garbanzo curry or potato achar.

Almond Cheese Crackers (Gluten free!)

Ingredients:


3 cups of almond flour
1 cup of grated cheese
2 eggs
1 stick of butter
1 teaspoon of dry or fresh dill
1 teaspoon of dry basil
1/4 teaspoon of baking soda
1/2 teaspoon of black pepper
Salt to taste ( I don’t put salt since the cheese already has salt.)

Procedure :

  • Pre-heat the oven to 350 degrees F.
  • In a medium-sized bowl, combine almond flour, salt, baking soda, herbs and cheese. 
  • Now add eggs, melted butter and stir ingredients until well-combined and make a dough. 
  • Divide dough into smaller pieces and start rolling on top of baking sheet covered with aluminium foil.
  •  Cut dough into pieces 2 inches squares. 
  • Bake crackers about 30 minutes or until they are lightly browned (takes longer if you have thicker crackers). 
  • And enjoy with a cup of coffee or tea.
