3 cups of all purpose flour
1 stick of butter
2-3 cups of vegetable oil for frying
Sugar to taste (1/4 to 1/3 cup)
1/2 cup milk
1. In a large bowl combine flour, sugar, eggs, one stick of melted butter and 1/2 cup of milk. Mix the ingredients completely into dough.
2. Roll dough until very thin using a rolling pin. Next, cut rolled dough into rectangular shapes, about 3 inches by 1 inch. Make a second cut down the middle of the rectangular piece leaving ½ inch uncut at each end.3. Fold one end through the cut in the center to make the traditional khapse shape.4. Heat oil at medium heat in a deep pan. Once oil is hot, fry khapse until they turn brown.5. Enjoy with tea or coffee!!
Almond Flour Muffin is SCD (specific carbohydrate diet) compatible.
3 cups Almond Flour
3 large eggs
3 ripened bananas
1 stick of butter (melted)
1/2 cup honey
1 teaspoon of baking soda
1 teaspoon salt
1/2 cup raisins (or walnuts)
Almond Flour Muffins: Preheat oven to 300 degrees F. Spray muffin pan with a non stick vegetable spray or butter it.
In a medium sized bowl mix together all the liquid ingredients: eggs, melted butter, vanilla, honey and gradually combine almond flour, baking powder, baking soda, salt and raisins. Stir until just combined.
Fill the muffin cups with the batter. Almond flour is difficult to cook with, so it takes a little longer to cook than regular flour. Place in the oven and bake for about 40-45 minutes, or until firm to the touch and a toothpick inserted in the center comes out clean. Place on a wire rack to cool. Makes 16 regular-sized muffins.
